Strawberry Cobbler
(Gluten-Free, Dairy-Free, Vegan)
As promised, here is the recipe for the allergy-friendly Strawberry Cobbler that I made last week. We had been to Beechwood Farms and picked a whole gallon of fresh strawberries...so we needed a good dessert to make with them.
Strawberry Cobbler
Ingredients:
2 tablespoons butter (I used dairy-free Smart Balance)
1 cup gluten-free Bisquick mix
1/2 cup sugar (I used 1/4 cup sugar, and 1/4 cup Splenda)
3/4 cup dairy free milk (I used coconut milk)
3 cups cut up strawberries (or other fresh or canned fruit)
Directions:
~Melt the 2 tablespoons butter in an 8x8 baking dish...in the oven at 375 degrees.
~Mix Bisquick, sugar, and milk together.
~When the butter is melted, remove the pan from the over and pour the batter in over the butter.
~Spoon the fruit over the batter. Do not stir!
~Bake at 375 degrees for 30 to 35 minutes.
I served ours up warm with some~
So Delicious Dairy Free Vanilla Bean Coconut Milk Ice Cream!
This dessert was gone in no time and so were the rest of the strawberries...

I have been eating strawberries like crazy for the past few weeks - they have been so good! This looks like a fantastic way to change things up :) And I LOVE GF Bisquick! Great idea!
